What’s Cooking in Morocco?

The food was phenomenal! Tea and the most exquisite looking cookies were served wherever we went. I mostly admired the cookies while drinking the tea! However, the food was another story. I was excited to see all of the vegetables available in some of the most traditional dishes. Many of the Fellows enjoyed Tagine - a succulent meat cooked with spices and vegetables in a clay cone-shaped pot which a few purchased to take home with them to later make their own creations. Couscous was only to be found a few times although everything I had read stated it would be everywhere! Fresh fruit was a delight at a time of year that back at home was harder to find.














We found a yummy vegetarian restaurant around the corner from our hotel and frequented often. The owner was accommodating and a delight to talk with.
